My Gluten Free, Dairy Free, Nut Free Banana Bread

1 Cup (approx. 3 large) Mashed Bananas 
1/2 Cup Coconut Oil
1 1/4 Cup of GF All Purpose Flour 
1/4 Cup Coconut Flour 
Egg Substitute = to 1 Egg (I use 1 Tbsp Flax Seed Meal + 3 Tbsp of Water, mix and let set for a couple of minutes until consistency of an egg)
1 tsp Baking Soda
3/4 tsp Salt
1 Cup Chopped Pecans (optional)
1 Cup Dried or fresh Cranberries
1 Cup White Sugar or 1/2 Cup of Brown Sugar/Maple Syrup Mixture (I used the latter)
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1/4 tsp Ginger
1/8 tsp Cardamom Powder

Mash bananas, add sugar or sugar mixture, egg substitute, and coconut oil
Mix until smooth
In separate bowl, mix flours and spices, and add to banana mixture
Add cranberries (and nuts if you are using them)
Mix well
Pour into either a well greased or parchment/wax paper lined 9X5 loaf pan
Bake @350 degrees for one hour
Cool and ENJOY with a cup of chai!
Option - Spread non-dairy cream cheese on it first
